Roasted Pork Tenderloin with Lemony Potatoes and Zucchini
This was another HelloFresh meal that I ordered and it's a recipe worth noting. I love pork. I mean, when I say I love it, I celebrate the entire pig. Ham. Bacon. Pork chops. Pork butt. My dad even loves hog head cheese, but that makes me throw up in my mouth a little bit. Seriously, y'all, I love every part of the pig except the head and the feet!
This starts out with dicing your potatoes and onions, slicing zucchini, and mincing the cilantro. New blog post coming soon about some of my favorite kitchen gadgets that you see in this picture!
Now it's time to roast your potatoes on the top oven rack at 425 degrees for 20-25 minutes. While your potatoes are roasting, sear the pork loin in your cast iron skillet. I love the yummy peppercorns and juices in this picture almost as much as I love cooking with cast iron.
Once your pork is seared, on another pan, spread out the zucchini slices with the diced onions on top of them, put the pork tenderloin on the pan with them and pop it in the same oven as your potatoes and cook for 15 minutes or until pork is done.
While all that is in the oven, you make the sauce. Use the same pan you used to sear the pork so you have all those good "drippings" in your sauce! Add minced garlic and a TBSP of butter and melt it until the garlic is fragrant. Then add about 4 TBSP of demi-glace (you can buy it in the store or from Amazon) and a 1/2 cup of water. Scrape the browned bits off the bottom of the pan while stirring to combine. Let it simmer for 3-4 minutes and then add some fresh cracked black pepper and a squeeze of lemon. Y'all this sauce is so yummy you're going to be looking for things to put it on!
You're now ready to take all of the yummy things out of your oven and get ready to enjoy! Serve with a squeeze or two of lemon, drizzle that delicious sauce over your entire plate of pork and veggies and sprinkle some minced cilantro! Simply divine.
