Everything-But-The-Kitchen-Sink Veggie Soup

Yesterday morning I looked at the weather for this weekend and immediately thought I needed to make a big pot of homemade soup.  In my Crockpot, no less.  #notallcrockpotsarebadafterJackdies  

I went to Tom Thumb on my lunch hour and bought all the groceries needed.  And, I bought some lovely pink hydrangeas.  I had to go back to Tom Thumb today to return dead flowers with my receipt so I could get some more.  Yes, today, I was THAT woman.  I ended up getting red and yellow tulips and they make my heart smile.  Hopefully they aren't dead tomorrow. :)

But back to the soup.  It's got every bit of vegetable goodness in it: green beans, tri-colored carrots (not because I was trying to be overly fancy, but because I had them in the bin in my fridge and needed to use them), regular carrots, okra, onions, peas, kidney beans, every kind of canned tomato I could find, zucchini, red potatoes, corn, celery, garlic, rosemary, thyme, oregano, dried onions, sundried tomato paste, and chicken stock.  Oh, and I have some brussels sprouts I need to use so I think I am going to take them apart into leaves and throw them in toward the end!  It was beautiful when I got it in the Crockpot.  


Doesn't that look super yummy and good for you?  Now I wait...

  1. Brussels? But rest assured...I try it with some good ole’ southern cornbread and cheese on the side!!!!!
