My Love Affair With HelloFresh

There are few things in life that have affected my home life like my subscription to HelloFresh.  There I said it. It's made me try new foods and spices that I never would have tried.  It's saved me an infinite amount of time at the grocery store. I rarely even go to the grocery store now.

I get the 3 meals for 2 (6 meals total) and have leftovers every time I cook a meal.  I don't eat them the next day for lunch or anything like that because I am not a fan of eating the same things two days in a row.  I seal my leftovers up in a FoodSaver bag and throw it in the freezer for me later or to give away to friends. I've introduced countless people to the service and they loved it too.  Oh, and I've tried other services like Blue Apron (ingredients are not as fresh and recipes not as good), Plated (just overall not as good) and Marley Spoon (blech, that's the Martha Stewart recipe one ~ but that's a story for another day).  

This is a HelloFresh meal I made last night. Balsamic fig chicken with sweet potatoes and mixed greens. I was absolutely starving by the time I began to prepare dinner so I started with the mixed greens to snack on...because it's just me and I can.  The recipe said to toss lettuce with a squeeze of lemon and a drizzle of olive oil and then to season with salt and pepper.  Honestly, y'all, that was the most tasty salad I have eaten in a while and I picked at it with my fingers while I was cooking until I almost didn't have any left by the time everything else was ready!   

So, so simple and yummy (and almost gone)!
The chicken and sauce came next.  The sauce was made from shallots, rosemary, balsamic vinegar, fig jam, chicken stock, and water.  I made it in my cast iron skillet after I cooked the chicken and it was fantastic!  We can talk about my affinity for cast iron in another post!
